The "default sort order" dropdown list includes all the columns of the table, indeed. That could lead to inconsistencies but dealing with that on this page will add much more complexity. Moving the sortable bit to this config page is a good idea, if we agree on such move I think it should be done for all the tables in one go, which can be quite hard to do.
