Around here, gender terms are, e.g.:
Woman
Man
Non-binary
Intersex
Two Spirit
(And, of course, "Prefer not to say" or just an option to leave blank should be
an option.)

The terms "male" and "female" are biological, and it's pretty insulting to
refer to a woman as "female," since it's biologically reductive.

Granted, I haven't seen this option in action--it's not part of our Koha
installation, and I'm not seeing it in the ByWater demo when I go to create a
new patron.
