at the moment authorised value categories cannot be deleted from the GUI:

Authorised value categories cannot be deleted
If you really want to remove it, you can do so with SQL. They are stored in
authorised_value_categories
<http://schema.koha-community.org/17_11/tables/authorised_value_categories.html>.
