There is a collection of scripts in the "misc" folder, some of them provide a way to export/import datas in Koha.

export_borrowers.pl, export_records.pl and i just saw misc/admin/koha-preferences which permits to export and import all the system preferences.

However there are quite other data and configuration options for which an export is missing like libraries, circulation rules, patron categories, koha-marc mapping configuration, Marc fields configurations, etc...

I would first suggest trying with an erratic dump and let the update tool from Koha do the job.

There are also batch scripts in misc to fix some of the erratic data.
