As Owen said, you can't disable the output of email and phone number from Patron in the report, but it's a really good question.
I know I have a preference for hiding personal information in reports as well. I think it's worth raising a report on https://bugs.koha-community.org/bugzilla3 for that enhancement to hide the personal information . The report isn't configurable, and the markup isn't detailed enough to let you hide elements using CSS.
