As psa said, Google talk uses very old Jingle specifications, I tried to stay up-to-date with the Jingle specifications but they're still at a Experimental state so it's often changing and improving. Currently, I think Kopete is only compatible with Kopete as Goggle Talk should catch up soon and Telepathy Gabble (used by Pidgin AFAIK) is also using an old version of the specs (but they will catch up when jingle switches to Draft) Don't worry, it can only get better.
