Hi Todd,
  You probably need to turn off HTML email composing.
  Go to Account Settings> Your email acc > Composition and Addressing.
  Uncheck the "Compose messages in HTML" option, and hit OK. 
 That way thunderbird will always use plain text - so no formatting.
