There is an EPIA with 2 ports built in, so that you only need one extra.
The VT-310DP is some strange multiprocessor board. It has at least two
ports and looks like it has the ability for a third (an RJ-45 header is
claimed to be on the board).

Use of either of these means that you would only have to add one more
network port (which could probably be either PCI or USB).
