Can Gaim (IM) allow *multiple* people to talk *together* to each
other like on IRC?
Or perhaps it would be better to run IRC server software
on my own server? Anyone know what name of IRC server software
is and where get?

I think GAIM has Rendezvous support now. It is a zero config IM
prototocol for LANs. It will find other Rendezvous clients, and add them
to your contacts. I haven't tried it with GAIM, but I have with
Trillian, and I believe the protocol came out of Apple(or at least its
popularity did)
