Virtual Appliances
A virtual appliance is a fully pre-installed and pre-configured
application and operating system environment that runs on
any standard x86 desktop or server in a self-contained,
isolated environment known as a virtual machine. Virtual
appliances provide an evolutionary step in the software
distribution model.

I've used a bunch of the different firewall appliances to try and find
one that matches my needs.
It works quite well, since you can start up the firewall appliance, then
direct traffic to it from existing boxes or other virtual machines.
I've also used VMs for testing software rollouts. Make a bunch of stock
machines and rollout patches/new software/whatever. Works especially
well for windows machines, where "Installation dialogs" have a tendency
to pop-up 3 or 4 reboots down the road.
