VNC will do it, just make sure you configure the client to "listen" only
(disable keyboard & mouse) and not to disconnect previous client
connections on the server. Otherwise it'll be a fun screen to watch ! :P
Keep in mind that each VNC connection will take some bandwidth from the
server, so 30 connections don't know how much bandwidth will required
and don't know how else it might affect the system. (I've never
connected 30 users to a VNC server). You can tune up some settings like
compression and reduce the number of colors, also just to update those
pixels that changes on the server screen (instead of the whole screen).
The VNC software I use and recommend is TightVNC.

There could be another option, and that will be to save a graphical
session to a file (mpg, avi, etc) so you can use that file for training
purposes anytime you need it. On Linux I use xvidcap.
