Technically, yes, you should be able to, although I'd make a backup of your /etc/localtime first and try it. If you get weirdness when executing 'date' afterwards, then chances are it broke something and you need to restore the original.
Let me know if this works and I'll use that method to update the 70 or so machines I need to update -- this is much less painful than installing an RPM on a bunch of boxes.
