I have an opinion: Forget the CPU and concentrate on the disk. I've never seen a mail server that hit cpu limits before it ran out of disk performance. You want as many spindles as possible in there and use mirroring instead of RAID 5. Depending on what your mail load is, of course. If the load is light I wouldn't care about disk or cpu. But definitely worry about disk long before cpu. In general I bet you would need 16 spindles worth of disk before you ran that dual core Opteron out of cpu.
