I'm sure Josh has CentOS 5 media handy. I haven't looked at it myself, but if it's really a complete rollup of RHEL 5 sources, Xen will be a total no-brainer if we use CentOS 5 as the base. Literally point-and-click easy.
Of course, to show how manly we really are, we can still use the command line for everything.
