These are pretty easy to make. See http://www.n56ml.com/pedals/index.html . And you can test the geometry with your foot (shoe) size and get it right for YOU. If you take something somebody else did, it likely won't work with your leg angle and foot size. The last thing you want is to apply the brakes when you only need rudder. If you're building an airplane, rudder pedals are child's play. And you can make the actual pedals light, rather than heavy, which is more the norm. You can also build small gussets into the corners of the steel pedal assemblies to beef them up a bit....one of the very few areas the design needs to be strengthened.
