I covered mine with 1 1/2 oz cloth. Seems to have held up well.

It is 3/32 aircraft grade plywood and I don't ever remember seeing
anything about covering it with cloth.  I think the deck cloth is a good
idea over open weave cloth, but it is just something to peel off of the
plywood. 
Using smooth prime and feather fill, you can get a great finish on
plywood.

Netters,

      It's been a long time since I built and I do not have a set of
plans any more but I seem to remember the original design was for the
boat frame to be skinned with 1/8" aircraft plywood and then covered
with a thin layer of fiberglass cloth and Ken thought this would make
the strongest structure considering all the compression and tinsel
pressures from the engine. As long as I knew him (from 1970 to his
death) he never had an engine fall off so he must have been right.
