Dan, KR2S taildragger is cool. I am a KR2 taildragger person, so don't feel as qualified as some of the S people on the net, to address this issue, but since I see that no one has answered, I will give it a shot.
You should be able to carry the weight, with a large engine and if you build it a little wider, or taller, depending on where the weight is distributed, you should be OK with being able to fit in the plane. I am 185, 5'9" and Jerry is 190, 6' and we are a tight fit in a standard KR2 with a canopy built to fit. We expect, with the proper attention to weight and balance, that we will be able to fly this plane together as we choose. I only wish we had a larger engine, but you have that option. If you like the VW, I do, get a type IV, rear drive from GPASC, http://gpasc com or http://usa.vw-engines.com/ . They have a 2400 rear drive with a PSRU, that may be perfect for what you want. If you want to land on grass, use 5X5 Clevelands or comparable and a Grove or comparable gear. I had a similar set up to that on my first KR and it was great on grass.
