The plans call for 2 pound (per cubic foot) urethane foam, which is sold by
both Wicks and Aircraft Spruce.  It comes in various colors, but most of it
that I've seen is either pink or a yellowish tan.  It is very similar (if
not identical) to the green florist foam.  My KR2S is made up of some pink
and some yellow.  I've seen no difference in the sanding (or other)
qualities of different colored 2 pound urethane foam.  I think the rubbery
stuff is isocyanurate (I'm pretty sure that's not spelled right), and it is
a pain to deal with.  Definitely don't bother with it.  It tears rather than
sands.

You can also use something very similar called Trymer 2000 (or some other
number), which is made for the construction industry and comes in huge 4' x
8' x 2' "buns" of urethane.  It is considerably cheaper than what the
aircraft guys charge, comes in much larger and thicker sheets, and can
probably be bought locally from an insulation place, saving on shipping.
Some guys have picked up the leftovers out of the dumpster for free.  The
stuff works just fine.

Some folks have used Styrofoam, but it takes considerably longer to sand to
shape, and gasoline dissolves it on contact.
