Dramatically.  It'll slow way down and go to a clicking sound once the
carb's float seals off the flow or it builds pressure against a closed
valve.

You could, but I don't know if you should.  It'll probably be annoying while
in the ground testing stage, but once you're flying, you might not even
notice it.  I'm hoping to have that clicking as a barely audible "OK"
indication from the fuel pump.  Erratic operation might be noticeable.

I'm in the middle of the fuel line and oil line thing myself.  Of course
I've now discovered that I'm about 5 fittings short of making it all work.
And I ran out of firewall space last weekend...
