It depends on what kind of epoxy you're using as to what kind of pressure you need. T-88 (which is the best way to go, in my opinion) needs very little clamping force, but enough to keep the two parts in contact until it cures. Not much at all. I usually coat both parts, let it soak in a few minutes, and then just stick them together (if gravity isn't involved) and let surface tension suck the two parts together as the epoxy is absorbed into the wood grain. I little bit of pressure is better though, to make sure they don't come apart while you're away...
