Probably any local HVAC ducting shop could seam it with no problem. 
I'll bet you could also overlap it some to accomplish 95% of the same
goal.  I assume you also intend to put Fiberfrax material underneath
also, right?
I had the same problem locating .005" thick material, and settled for
.015.  When I took it out of the box, the weight alone made me say out
loud "no way is this going on my KR!".  Rand Robinson sold .005" at the
time, so I got it from them.  I'm sure they had to buy a roll and have
it cut into firewall size, so you're not the first to discover this. 
Unless NVAvero sells firewall SS, I'd go with your seaming plan and be
happy....
