Sorry, so I am trying to reproduce this without luck. I have a live
session going and clicked defaults in systemsettings->shortcuts and my
shortcuts still work. meta brings up application launcher and ctrl-alt-t
brings up terminal. Did I miss a step? Is this after install?

Title:
Out of box shorcuts are lost when defaulting shortcuts. Defaults makes
shortcuts lost. Clicking default defaults to not to default defaults
but to different defaulting defaults faultly.
