I would think that regular old spray lacquer (sp?) would be a good fit
for the blocks.  Not sure where they're going, but definitely plan on
them getting splashed (just in case).  Dielectric grease for any
connectors (gold plated if possible)?

Just throwing random stuff out here.  I honestly don't have that much
experience w/ watercraft.  You might want to take a look to see what
other electronics have done to protect themselves.  Either that, or set
up a service contract (come out every x months to ensure that everything
is tight & not corroded) to try and head off any long-term damage, and
to see the status of your install.  (e.g.: It's an atypical "harsh"
condition environment, you just want to have due dillagence, yada, yada,
yada, take the thing for a ride, etc :-))
