Irvine -- Why isn't UC Irvine serving cage-free eggs in its food services? For months UCI political scientist and Asian Americanist Claire Kim has been trying, without success, to get UCI to serve eggs of free-ranging chickens in its dorms and campus restaurants. Aramark, which has a multi-year contract with UCI to provide food services, is willing to do so, according to Prof. Kim, but the university still hasn't moved on the issue.
This coming Monday, Subversity, a KUCI public affairs program, features Prof. Claire Kim, who teaches a course on the politics of food, discussing why she believes cage-free eggs are important. She also tells how she ended up leading this effort on campus. UC Berkeley has gone even further, mandating organic eggs to be served on campus. This week as well, Burger King announced it would begin purchasing cage-free eggs.
