This is my opinion and what I have seen from experience (course I am always open to new ones as it helps me learn).  I have been breeding AU labradoodles since 2001. 
A gal I met with a F1 wanted to breed to my multi-gen Au labradoodle who had a wool coat and didn't shed at all.  I was interested in this because I thought it would be great to bring in some new breeding stock .  This stud never produced a shedding pup before or after & she had never been bred.  So I got to observe the puppies.  She had 2 litters of 9.  Some pups were extremely wirey, some similar to one of my AU pups, and then a couple had huge patches of hair loss (this was a few months after birth). 
Personality wise.. since both parents had been tested for temperament... they were great... smart and more chunky than my average doodles.  Please give me experiences you have all had.  I breed for service work so non-shed coat is huge for me.  Trust me I know it doesn't make the dog any better but for the people our dogs help it is a must that they don't bother their allergies.
 
The other side:  Just recently I got a different look from 2 multi-gen dogs.  There are some other breeds besides Lab and Poodle in the Multi-gen AU doodles to improve the coat and size and temperament.  What we got a more American water dog look in about 3 of the 10 pups.  they are husky but don't get the long hair on their nose.. they are adorable and don't shed but still different.  so the moral of this story is it can happen to us all but not as likely in the multi-gen dogs.  I have had over 125 pups and only these have been out of the normal...  and even they are very nice dogs just not the typical expected pup.
