Hi everyone and T. A reasonable cookie can be made from an oatmeal and oil based pastry dough, add non-dairy chocolate, raisins and/or grated apple and a bit of soy milk for binding. If hard margarine is tolerated, use the kind made from canola oil. The cookie/biscuit won't be as tough as if made with oil. Press into a pan, bake at 350 for 15 minutes or so. Allow to cool in the pan before cutting.
