Dear Friends, I got this recipe this week from my friend Viv in Australia's Northern Territory, and although a bit dubious, I made it today with great success. It's so easy and so scrumptious.
Apple Slice Ingredients: - 1 packet of plain sweet biscuits (cookies) . I used wheaten wholemeals - 600 ml (1 pint) of sour cream - EITHER 1 can of pie apple OR 3 fresh apples - 2 tablespoons sugar - about half a cup of water - about 4 tablespoons butter - cinnamon, nutmeg, - 1 teaspoon of cloves (I used ground cloves) Method: 1. If using REAL apples, peel and core them, then slice into little cubes and lightly stew them with the cloves, sugar and water. Mash them a bit with a potato masher, and set aside when ready. 2. (I love this bit) With a rolling pin, smash up the biscuits to crumbs and put in a mixing bowl 3. Melt the butter and add to the biscuits, mixing well to form a base for the slice. 4. Press this base into your slice tray (I used a large spring form dish). 5. Spread the stewed apple on top of the base. 6. Spread all the sour cream on top of the apples. 7. Dust the top with cinnamon and a little nutmeg. (I also added a few drops of lime juice here and there). 8. Bake in a moderate oven (350F: 180C) for about 10 minutes. 9. Remove from oven. Allow to cool and place in the fridge, Ready to eat in an hour or so. Yummmmmmmmmm.
