Dear Friends,
Today I received a lovely variation on the recipe of the apple and sour 
cream slice which I sent a mont or so back. Try it - you'll love it.

VARIATION from Maureen FRENCH of Clunes, Vic. (May 2004)
BASE:
-       make using a packet of cheap plain cake mix (instead of biscuits) & 
3 tbs melted butter.
-       Put a layer of shredded cocoanut on top and then bake for 15 
minutes at 350F
-       Do this in a deep spring form pan as the topping mixture is fairly 
runny.

FILLING:
-       use any can of fruit drained. Maureen used peaches: I used apricots

TOPPING:
-       beat 1 egg with 300 mls of sour cream (or 2 eggs with 600 mls) 
depending on the quantity you want.
Pour over fruit, sprinkle with cinnamon and bake for a further 15 minutes 
at 350  - 400F
