Thought you might enjoy these from cousin Pam in Geelong.

Mediterranean Salad

Equal parts of:-
-       black olives
-       moist sundried tomatoes
-       spring onions
-       artichoke hearts from a jar
-       diced Lebanese cucumber

Half part of:-
-       cubes of Fetta cheese (preferably marinated in garlic oil)
-       slices of Boccincino cheese

Toss together; place on a bed of lettuce; sprinkle with Olive Oil & Lemon Juice
Lastly sprinkle liberally with chopped FRESH Coriander.

Bean Salad
-       slice up some FRESH green beans (must not use canned) and lightly 
cook them  no more than 10 minutes
-       while beans are cooking, dice up 3 rashers of bacon (fat and all) 
and fry in a wok with equal portion of diced spring onions
-       place beans into cold water to stop the cooking, and then let them dry
-       make a cup or so of any very fine pasta
-       put beans into serving dish
-       strain pasta and add to beans
-       add bacon and onions
-       sprinkle with Olive Oil, Lemon Juice, Salt & Pepper
-       Toss together
