We live in what I often call "Southwest outer Nowhere", and we don't have trash pickup. Instead, our taxes to the local township pay for something called a "transfer station", which is basically a pickup point for all of our trash. The transfer station is open on Saturdays, and we haul our trash there. Each year they issue us a punch card, and if you use it up, you have to buy another. We recycle and compost most of our trash, but for fatty or greasy things like the chicken bones (which don't go into the compost heap, because caterwauling raccoons at 3am wake both me and the dogs!), we do keep a labelled bag in the freezer. Often we skip a week between trips to the transfer station, and I'm sure two-week-old chicken scraps would get pretty unpleasant if we didn't freeze them.
