I came across this recipe in an ad in the Better Homes & Gardens magazine. It was not on the website of McCormick Spices www.mccormickgourmet.com so I decided to write it up. It was delicious. DH and I had one each after dinner and have two more for tomorrow. Yum.
Molten Spiced Chocolate Cabernet Cakes (makes 4 servings) 4 oz semi sweet baking chocolate 1/2 cup (1 stick butter) 1 tbspn Cabernet Sauvignon or other wine (I used Merlot) 1 tsp McCormick Pure Vanilla Extract 1 cup confectioners sugar 2 eggs 1 egg yolk 6 tbspn flour 1/4 teaspoon Cinnamon 1/4 teaspoon Ground Ginger Butter 4 6oz custard cups or souffle dishes. Place on baking sheet Microwave chocolate and butter in bowl on High 1 minute or until butter is melted. Whisk until chocolate is completely melted. Stir in wine, vanilla, sugard until blended. Whisk in eggs and yolk. Stir in remaining ingredients. Spoon evenly into prepared dishes. Bake in preheated 425 deg F oven 15 minutes or until sides are firm but centers are soft. Let stand 1 minute. Loosen edges with knife, invert onto serving plates. Sprinkle with confectioners sugar if desired. It would make a nice easy dinner dessert if plated on top of drizzled chocolate sauce, sprinkled with sugar and a raspberry and mint leaf put on top. The inside remains a gooey chocolate sauce and it would also go well with vanilla ice cream. Dead easy for the lazy bakers like me.
