Assuming it's a cooked turkey, what about unbleached calico (in the UK the 
thick cream cotton stuff used in upholstery or similar to the stuff used for 
curtain linings)? A bag stuffed with something light for the body and two 
near-cylindrical shape sewn on the sides for the legs. You could put a bit 
of brown paint on to show it's been cooked. Or fleece of a suitable colour 
and possiby patterned, stuffed the same way.
