We use left-over cooked pumpkin to make fritters :- 2 cups mashed cooked pumpkin 1 egg 2 teaspoons baking powder Pinch of salt 4 Tablespoons flour or just enough to thicken the mixture
Mix the pumpkin and dry ingredients - the mixture must not be too thick Beat the egg and add. Heat a thin layer of oil in a frying pan and drop spoonful of mixture in the oil. Fry on both sides until golden brown. Sprinkle cinnamon and sugar over the fried fritters and serve with lemon wedges. Nice to eat on a cold day!!
