There is no need to have knots when you start, just wind a pair of
bobbins in the usual way, but fill one bobbin and just a small amount
of thread on the other. The nature of Honiton is that you work a small
section, cut the bobbins off and then start another section. The
traditional Honiton way of cutting the bobbins off is called 'bowing
off'. You use a small pair of blunt scissors to knot the thread and
cut at the same time, this leaves the two bobbins knotted together.
When you start the next section just wind the thread back from the full
bobbin and onto the nearly empty one. You do that by holding both
bobbins, one in each hand with the heads facing up. Tenison the thread
and roll both bobbins in the same direction.
