There are many species of thistles in the northern hemisphere. Some have deep green, some yellowish-green, some gray-green, and some bright green. There's one species found in southern California (I think it's actually a foreign invader, but it's frequently found where cattle have disturbed the environment) that has large, rich green leaves with white lines criss-crossing them.
