Janice Blair had a really cute pattern of Santa (Milanese) on one of the Christmas cards that The Lace Guild (UK) put out a couple of years ago. Also, there is a book -- can't remember the title but I think it was by Ullla Fagerlin -- which is full of winter-related figures (a kid sledding, a kid dragging a Christmas tree, etc) and it includes a Santa (and his Mrs <g>)
