We used the fish demo last year. We had a standard 24" cookie pillow, and I think we had three patterns on it at a time. We found that it took one person full time to suppervise the lacing, and another person to wind bobbins.
Along with the fish, we had a much shortened snake pattern -- about 4 inches long. Alot of people would only work an inch and then leave. A very persistent child would do the whole thing. Whomever finished the tail got to keep it. Later in the day, we changed to the fish patterns so they could be finished faster. We wound bobbins full, and then wound off, as much as we could. We had to refill more often than expected so this year I'll use larger bobbins that can hold more thread. The fish pattern goes faster, and doesn't take much time to reload the bobbins. Having a reserve supply of wound bobbins is a real aid if it's a busy day. If you have only one or two people working the demo, you may want to have only two patterns on the pillow.
