Many years ago I saw Bertha Kemp at a lace day.  Bertha was one of the last
survivors of the Downton Lace industry and wrote the first book (to my
knowledge) on Downton Lace.  She was working so quickly that I thought she
was just tidying the bobbins.  But she was actually working them with hands
down.

I work both ways, depending on the mood I'm in.  However, hands down is much
faster -  I don't pick up the bobbins, just flick them over.  For this
reason I don't like square bobbins.  I've got all sorts which I use for
different laces - Honiton, continental in various sizes, Downton,
Malmesbury, Maltese and spangled East Midlands (and of course, pillows to
match.)
