As an ex knitter I noticed that if I made a mistake while working and undid
a row or two of it was immediately there was no misshape on the wool, if it
had been knitted up for some time then it was all lumps and shapes, also
thread with 'memory'. This is again why I leave mine in pins for at least a
day.
I think as has been said we all have to try both, taking it straight off or
leaving it for a small amount of time and see which we personally prefer. I
expect people who leave a project unfinished for longish periods of time and
then finish up quickly and take them off the pillow quickly might also
noticed some difference between the two bits, I would be interested to know?

Notice how thead comes of the spool in longish loops? Notice that after
it's been on the bobbin it's in much shorter loops? Thread has 'memory'.
It needs some time to get used to its new shape. Then it will cleanly
navigate the curves, twists, and about-faces of it's thread path. If taken
out of pins too quickly, it's a little sloppy in how it travels through the
lace.
