I think some lace hats are made in 3 pieces, - Brim, the top, and the side piece, and then sewn together.
Seems a more logical, and easier, way to me!! Making the top and sides in one piece would be awkward to work, I would think. They would not give much shade from the sun, do look pretty, though! Hmmm!
