I am like that. But only on pieces where I have enjoyed the pattern do I really not want it to be done. Hence I have several pillows with half finished projects. But if I am just a few inches away from finishing, I do like the satisfaction of working it through to the end. Then I toy with the idea of starting yet another piece I know I will enjoy, instead of trying to finish those others on the pillows.
