There's a lot more to it than just where the bobbins are moved to, it's also the way they are moved. As you speed up the bobbins tend to be flicked, or thrown, or rolled - everyone works in a slightly different way - and that action is more likely to have an effect on the twist of a thread. Also the way the thread is wound onto the bobbin can have an effect.
