I was taught to leave a piece on the pillow for 24 hours after finishing to
set the threads, so I'd say somewhere between 12-24 hours to set would be
what you might want to aim for.

There's lots of info around on how to help keep threads hydrated.

I know living in Colorado for 16 years meant I had to take a little more
care at times with threads - more so in protracted dry spells, usually
during the summer when humidity drops to single digits, and one method I
employed was to take my uncovered pillow into the bathroom when showering,
and the humidity in the air would be enough for the threads to absorb and
rehydrate if necessary.  I mainly work with cotton, as I do Beds lace, but
sometimes I'll use linen.  The method applied for both types of thread.

Re: yardage on bobbins - I'm with Jane and the others. Too much thread may
cause more problems than you envisage, and I'd be more inclined to switch
out workers, and then feed in new bobbins as needed.  When worked together,
the small section of double thread won't show in the overall picture, and
will only be visible upon very close inspection.
