I usually end up leap-frogging > my versions. I take big jumps rather than little steps. As always, it depends. If a rather large project is in an advanced stage I'd shy away from 'changing the horses in the midst of a race'. But if some part of a project is buggy or an upgrade for that part provides an excellent improvement for my project, I'd give it a try on a parallel installation (either my laptop or one of my two desktop systems). My last big project (finished) still sticks with LV6.02 German. Smaller ones have been finished on 6.1 and 7.0. An example for updated components are NI-DMM, NI-Switch, even MAX and so on.
On the other hand, there have been times (before or at 6.0) when I got the inofficial hint from NI devellopers _not_ to use parallel installations of different versions of LabVIEW on the very same machine. So at this time I started having several machines, partially witch swappabel HDs. But at the moment I have often more than one LV (6.1 and 7.0 and...) again on my machines. Just my 0.02.
