Will the TakeProductName function return a string with the embedded profile name? So if I have a JPEG with an AdobeRGB1998 profile embedded would I be able to retrieve that string with TakeProductName?
Use cmsTakeProductDesc() instead. It will return the string "Adobe RGB (1998)"
Please note this has nothing to do with the profile filename. As you embed the profile, it is no longer a file and therefore it has no name.
