I'm not sure that's true. I had no problems loading separate LUT tables for my multi-montor setup under Windows 2K, even running two monitors from the same card (an Nvidia 6600GT). In fact, I've had success with loading separate LUT tables on MAC OSX (easy) and X11 even running Xinerama (more of a puzzle, but easy in the end). Of course some of this may be card/driver/configuration dependent.
