I'm a little hazy on this, but I think there's a single field containing 
the number of grid points (which applies to all dimensions), and the 
points just monotonically cover the entire coordinate space of the 
relevant colourspace.  Skewing the distribution of those points, if you 
wish to provide denser coverage of a specific area, can be done using 
the 1D tables.

In a word, proofing.  Having converted data into the printer's colour 
space, it's very useful then to be able to convert into the monitor's 
colour space to simulate the appearance of the printed image.
