I filed bugs with Apple (for Mail app), and Mozilla for Thunderbird. I know that Mozilla has made strides to meet the issues I raised. Microsoft is anybody's guess, since they always want to do things their way. For any open source project, I'd suggest filing a set of up to 3 bugs, depending on what features their app does/doesn't support.
