One way I know of to do what you want:

Create "accounting" rules with ipchains.  This is a rule that matches any
packets to and/or from a given IP address, but doesn't do anything (ie no -j
<target> parameter).  You can then configure MRTG to track the packet/byte
counts for these rules.  I haven't set up MRTG to do this, but I remember
seeing some scritps and/or descriptions of how to do this when I recently
setup MRTG to do more conventional interface monitoring.

There are probably other ways to do this, as well, and with the above method
your usage info won't go to syslog (unless you make a cron script or
something to 'harvest' the accounting rule packet/byte counts every so often
and log it with logger or similar), but you might find the techinque useful
anyway...
