It sounds like WinNT won't take the full default lease of 7 or 10 days (I forget which it is). Udhcp won't renew the lease because the lease isn't up after a couple of days. This sounds like an incompatibility with NT. Why don't you manually edit the lease time in /etc/udhcpd.conf to something like 2 or 3 days, restart udhcpc, and see if the problem persists.
